Modern Nigerian Breakfast- Eggs and Plantain
What's a Nigerian breakfast without plantains or eggs, that breakfast isn’t a real breakfast. I’m sure my fellow West Africans can agree, we don’t play with our “plantains” lol
A blast from the past, I remember fixing this dish for my parents and 5 siblings often. Though it's a simple dish, with spices and a bit of creativity I'd have my siblings begging "fisi fisi", meaning give me extra, before I served their plates lol

If you’ve never had plantains,( NOT BANANAS), you might want to give them a try. Here are some benefits of why plantains are better than bananas :
1. Less sugar than bananas
2. They have more fiber than bananas.
3. They help maintain healthy microbiome in the gut.
4. They are rich in magnesium, potassium, and vitamins C and K.

Ingredients:
2 ripe plantains, fried
1/2 cup diced red onion
1/2 cup diced yellow bell pepper
1/2 cup chopped fresh parsley
2/3 cup grated Parmesan cheese
1/2 tsp minced garlic
1/4 tsp chicken seasoning
1/4 tsp red pepper
1/2 cup halved cherry tomato
1/2 cup tomato sauce (homemade tomato sauce)
3 large organic cafe-free brown eggs
For garnish:
Grated Parmesan cheese
Red pepper flakes
Fresh parsley
Instructions:
Preheat oven to 425 degrees F.
Pan fry red onion and yellow bell pepper in 6 inch cast iron skillet (or oven safe pan) for 2 minutes.
Stir in the garlic, cherry tomato, tomato sauce, chicken seasoning, red pepper and chopped parsley.
Add fried plantains & grated Parmesan cheese.
With a spatula, create 3 small crevices in the pan (evenly spaced)to prevent the yolk from breaking.
Add extra cheese on top of eggs and place skillet in oven for 15-18 minutes or until egg whites are set.
Garnish with fresh parsley, Parmesan cheese & red pepper flakes.
Notes:
Be sure to check your eggs, baking times vary with oven and type of skillet used.
